American White Sturgeons, known scientifically as Acipenser transmontanus, are native to the American West Coast and are now sustainably cultivated in ponds in California that are supplied with fresh artesian water. They are fed a natural diet that helps their caviar closely resemble the renowned Osetra caviar in flavor.
The caviar features generously sized beads ranging from golden to dark brown hues, giving it a glossy appearance. It has a lightly nutty taste that is both smooth and rich.
Our caviar is packaged in either glass jars or metal tins, depending on availability.
